Arkady Novikov's Japanese cuisine restaurant IMA has a special set based on kaiseki, created by chef Takumi Wada-san. It introduces guests to one of the main gastronomic traditions of Japan and allows them to taste several key dishes in one visit. The offer is available throughout the day, and you can order it, including on the summer veranda overlooking the Zaryadye Concert Hall.
"Kaiseki" includes seven courses (4,900 rubles). It includes chuka with nut sauce, assorted sashimi from akami tuna, perch and striped mackerel shimaji, fermented vegetables, halibut in miso yuzu sauce, tyawanmushi - Japanese steamed omelet — with red caviar, three types of nigiri — with medium—fat part of tuna chutoro, singed salmon and Japanese lakedra kampachi, classic miso soup, and rice candies are the end.
"Hong-kaiseki" out of ten courses (7,900 rubles) is expanded with three additional serves: it opens with shrimp ama-ebi with black caviar and sea urchin caviar, beef tenderloin is added to the main dishes, and the dessert part is complemented by yuzu sorbet.
You can support the ritual with drinks from the bar and the sake menu of the restaurant to choose from. The sets include original cocktails — Senta Collins with cold brew of Senta tea and Japanese gin, Silent Sakura with sakura liqueur, setu and cordial sagan–yuzu, Momo Honshu based on sake, jasmine, lychee and peach.
You can also choose teas from a traditional Japanese collection for lunch. This format of accompaniment is directly related to the history of kaiseki and its origin in the culture of the tea ceremony. Additionally, sake, tinctures, homemade lemonades, freshly squeezed juices, coffee and matcha are available.
In the warmer months, sets can also be ordered on the summer veranda of the IMA, a chamber space with 25 seats overlooking the Zaryadye Concert Hall. Greenery, flowers and a laconic interior with natural wood continue the Japanese aesthetic of the restaurant. Lightweight textile panels create a sense of privacy, protect from the hustle and bustle of the city, allowing you to hide in the shade and enjoy your vacation.
